I think they are referring to saccharomyces boulardii natural yeast, not 'baker's yeast'.
 
I thought this was a very informative interview, densely packed with information on a variety of subjects. Lewellyn King is clearly well-versed in recent developments and asks very pertinent questions.

If one pays as close attention to the news as the members of this forum do, it may seem like familiar territory, but for a lot of people this interview will provide some very helpful insights into the work at Stanford.
